French Labour Code

Articles R4227-1 to R4227-40 of the Labour Code impose general obligations on employers, such as risk assessment and the implementation of appropriate preventive measures.

Order of 25 June 1980

The Order of 25 June 1980 on safety regulations against the risks of fire and panic in establishments open to the public (ERP) lays down clear rules on fire protection in establishments open to the public (ERP). It defines the fire safety requirements applicable to professional kitchens, depending on how they are operated and their surface area.

Article GC 8 of 10 October 2005

Article GC 8 is part of the Order of 25 June 1980 and was amended on 10 October 2005. It specifically concerns professional kitchens, requiring ERP operators with this type of installation to implement enhanced fire protection measures.

‘Large kitchens, warming rooms and each cooking island must have fire extinguishing equipment appropriate to the risks presented. In large open kitchens and cooking islands, automatic extinguishing devices adapted to oil fires must be installed in line with open deep fryers.’

Installing an automatic fire detection system adapted to the risks involved

The automatic fire detection system must be able to detect a fire as soon as it is started and trigger an alarm to alert the occupants.

Installation of an automatic water or gas extinguishing system

Your professional kitchen must have at least one fire extinguishing system to control a potential fire outbreak and prevent it spreading.

Compartmentalisation of kitchen areas

By compartmentalising your professional kitchen, you can confine the fire to this specific area only, so that it cannot spread to other areas of your establishment.

Installing an effective ventilation system

By installing an efficient ventilation system, you can ensure that smoke and combustion gases are properly evacuated in the event of a fire, making it easier to evacuate people and limiting material damage.

Frequent cleaning of hoods and exhaust ducts

Regular maintenance of cooker hoods and exhaust ducts keeps them in good working order and prevents them from clogging up and potentially starting a fire.

Training your staff in fire safety

Your staff must be trained in the use of fire extinguishers, in the different behaviours to adopt in the event of a fire, particularly in terms of evacuating the premises, and in the fire safety instructions specific to your establishment.

Good to know: there are specific provisions for large kitchens, warming rooms and cooking islands:

  • Large kitchens: it is compulsory to install an automatic fire-extinguishing system suitable for oil fires in the vicinity of open deep-fat fryers ;
  • Reheating units: installation of a ventilation system to supply air and evacuate stale air, grease and fumes;
  • Cooking islands: each cooking island is fitted with a fume and grease collection system to facilitate smoke evacuation in the event of a fire.
